Spaghetti w/ Tuna & Lemon
Serves: 2
Ingredients
- 200g spaghetti
- 1tbsp good quality olive oil
- 1 clove garlic (finely chopped or sliced)
- 2tbsp chopped parsley
- 110g tinned tuna fish
- juice of 0.5 lemons & some rind
- half a red chilli pepper
- freshly grated parmasean
- 1tbsp butter (15g)
- salt and pepper to taste
Method
- Heat olive oil on a low heat, add the garlic, parsley & chilli pepper
- Gradually add flaked tuna fish, adding more olive oil if needed or dry
- Cook the pasta until al dente in a separate pan
- Drain pasta, add it to the sauce
- Fold sauce into pasta, add lemon juice, cheese, butter & seasoning
- Serve
